Strawberry and Cream Dome
  • Difficulty: Easy
  • Cost: Budget-friendly
  • Rest time: 2 Hours
  • Preparation time: 20 Minutes
  • Portions: 8Servings
  • Cooking methods: Oven

Ingredients

  • 6 Eggs
  • 1 1/4 cups All-purpose flour (150 g)
  • 1 cup Granulated sugar (200 g)
  • 6 tbsp Hot water
  • 1 tsp Vanilla extract
  • 2 punnets Strawberries
  • as needed Milk
  • 2 cups Heavy cream (500 ml)

Tools

  • Hand mixer
  • Spatula
  • Springform pan
  • Bowl / Mold

Preparation

  • To make the strawberries and cream dome, separate the yolks from the whites and place them in two separate bowls. In one bowl, beat the egg whites until stiff with 50 grams of sugar. In the other bowl, beat the yolks with the hot water and gradually add the remaining 150 grams of sugar.

  • Add the vanilla extract to the yolks and mix well. Gently fold the egg whites into the yolk mixture using an upward motion. Finally, add the flour a little at a time.

Line a springform pan (diameter 8.7 in / 22 cm) with parchment paper and pour in the batter, leveling the surface. Bake in a preheated oven at 356°F (180°C) for about 40 minutes, until golden and a toothpick comes out clean.

Once baked, leave it in the turned-off oven with the door slightly ajar for about 30 minutes. Watch the video to make a perfect sponge cake at home.

  • Slice the sponge cake into two layers so you obtain three pieces that will make assembling the dome easier.

  • Whip the cream, reserving a small bowl in the fridge that will be used to coat the dome. Wash and chop the strawberries, leaving some aside for decoration.

  • Line a zuccotto mold (diameter 7.9 in / 20 cm) with plastic wrap, place pieces of sponge cake soaked in milk on the bottom and sides. Then alternate a layer of cream, a layer of strawberries and a layer of sponge cake (always soaked with milk). Finish with sponge cake. Cover with plastic wrap and refrigerate for at least a couple of hours.

  • After chilling, place a serving plate on top and invert the strawberries and cream dome. Remove the plastic wrap, garnish the dessert with whipped cream and decorate with strawberries and cream rosettes.

  • You can decorate by adding chocolate shavings.
