I season the chicken pieces (thighs, drumsticks, and others) with oil, salt, pepper, and rosemary.
I then arrange them in a baking dish without overlapping, pour half of the light beer, and bake in a static oven at 350°F for about 45-50 minutes, turning halfway through and basting with the remaining beer during cooking.Meanwhile, I thinly slice the onions and soften them in a pan with EVO oil; I add brown sugar and a splash of water, continuing until caramelized.
Now I compose the dish by combining the roasted and tender chicken pieces with the tender, juicy, and fragrant caramelized onions!
