Coconut Softies are simple Turkish treats called Sütlü Lokum,
They are made in a few minutes with milk, coconut milk, and cornstarch, They have a soft and creamy consistency, can be cut or rolled, and are coated in coconut.
Fresh, delicate, and light: perfect with tea or as a dessert.

Small fluffy coconut sweets, as white as snow and fresh to eat in one bite. As mentioned above, they are quick and without cream, without eggs and no-bake. Once firmed up, they are coated in coconut and decorated with a raspberry or a strawberry, adding a slightly tart touch, perfect to balance the sweetness.

They are light, simple, and delicate, ideal as a dessert after dinner or for a special snack.

CLEARLY, the number of coconut softies depends on the size of the molds, but it’s superfluous to say so, right?!

NO-BAKE COCONUT SOFTIES

Ingredients

  • 2 oz cornstarch
  • 1/3 cup sugar
  • 7 oz milk
  • 14 oz coconut milk
  • 1 tsp vanilla extract
  • 1 tbsp grated coconut
  • 6 raspberries

Steps

  • In a small pot, cold, mix milk, coconut milk, sugar, and cornstarch, stirring well with a hand whisk to remove any lumps and to blend the ingredients well.
    Then put on medium-low heat and cook, stirring constantly, until the cream becomes thick, smooth, and silky: it will take about 6-7 minutes.
    Turn off the heat and pour into the chosen molds.

  • I personally saved some single-serving portions from the Wanda ice cream shop in San Lazzaro di Savena, which contained amazing melon, pistachio, and other flavored sorbets, and I poured the coconut cream here.

  • Let cool for 20 minutes at room temperature, then refrigerate for at least 3 hours until it becomes firm yet soft.

  • Once the cooling time has passed, remove these no-bake sweets with a coconut flavor, roll the sides in grated coconut, and then place a raspberry on top of each serving as a garnish.

    Then it’s time to serve!

    I prepare them this way and they are delightful coconut-flavored desserts!
