Quick and Tasty First Course
In a pan, heat the EVO oil, add the peeled and chopped shallot and let it soften.
Meanwhile, place the high-sided pot for pasta cooking on the flame, salt the boiling water, and drain the pasta al dente.
Once the shallot has softened in a few minutes, add the salmon pieces and let them sit on the heat for a couple of minutes, stirring the sauce.
Also pour the cream cheese into the pan with a ladle of pasta cooking water and mix everything well.
Drain the pasta al dente, transferring it moist into the pan with the salmon and cream cheese sauce.
Turn off the heat, toss the pasta, also adding the washed, patted dry, and roughly torn arugula with your fingers.
Final touches are a few pinches of black pepper and a splash of lemon juice, and the dish is ready to be served at the table.
