Ktipiti Greek Pepper and Feta Dip

I worked in Greek kitchens and love almost all traditional dishes, and on the blog, you can find a collection of recipes (read HERE) ranging from appetizers to desserts.

Typical appetizer preparation in Greek cuisine includes sauces from TZATZIKI to MELITZANOSALATA and today I prepared the KTIPITI Greek dip based on roasted peppers and feta, truly exquisite and delicious with PITAS or with crostini.

The appetizers on the blog are, I believe, the category with the most published recipes alongside desserts, and I also suggest:

Ingredients

  • 5.3 oz peppers (roasted and peeled)
  • 7.1 oz feta
  • 2.1 oz Greek yogurt 2% fat
  • 1/2 clove garlic
  • 1 pinch oregano
  • 1 pinch sweet paprika
  • to taste extra virgin olive oil
  • to taste pepper
  • to taste mint (freshly chopped)

Steps

  • 1) As mentioned above, the pepper needs to be grilled or otherwise cooked and peeled. So, first I wash and remove the seeds and internal filaments of the vegetable.

    2) I cook in the oven or on the grill until the thin skin turns black, then I put the peppers in a plastic bag, leaving it to cool for a few minutes.

    3) It will then be very easy to remove the blackened skin and obtain tender and well-cooked pepper strips, which I then place in the beaker or the container of the immersion blender.

    4) Now I add the other ingredients, namely the feta in chunks and the yogurt.

    5) I turn on the blender and also pour in the extra virgin olive oil, creating a homogeneous and creamy sauce.

    6) Then I add the aromatic herbs, garlic, and adjust with salt and pepper… In fact, it’s better to taste before adding salt because feta is quite tasty and salty, so we proceed carefully not to end up with inedible KTIPITI Greek dip!

    7) Here you have the finished pepper and feta Greek dip. Now I put it in a sealed container and leave it in the refrigerator until it’s time to set up the savory appetizer buffet.

While researching online, I also found KTIPITI Greek dip recipes that don’t include yogurt. For me, it makes the whole thing more delicate and creamy, but as always, try it out and maybe add the yogurt only after blending feta and peppers to assess the flavor!
