SUPER SOFT PEACH CAKE

The super soft peach cake is the classic homemade and genuine dessert with a light and creamy batter made with seed oil and a mix of all-purpose flour and potato starch where the diced yellow peaches sink!

Peaches are one of the summer fruits that I love and consume the most, even if I am finding it increasingly difficult to find fragrant and good fruit compared to a few years ago, so I will definitely start sourcing directly from the farms in the Bologna area.

On that note, if anyone who follows me has some names to suggest, I would be very grateful!

Fruit-based desserts and cakes are certainly appreciated by children as well and with a fruit juice perhaps homemade, they are already better than many industrial products!

The batter for this super soft peach cake can be a base for many other recipes because you just need to add floured chocolate chips so they don’t fall, candied fruit, and also other types of fruit such as apples, pears, apricots, etc.

SO HERE IS THE RECIPE FOR THE SUPER SOFT PEACH CAKE but I also leave you with the recipes for other peach preparations, who knows if some might interest you!

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1/3 cup corn oil (for me corn)
  • 1/3 cup water
  • 1 1/2 cups all-purpose flour
  • 1/2 cup potato starch
  • 1 packet baking powder
  • 4 peaches (in pieces)

Steps

  • 1) In a bowl, whip for at least 15 minutes the eggs with sugar: they must become super soft, light, and fluffy!

    2) Gradually add both the water and the oil while continuing to beat with the mixer on low speed.

    3) Mix the dry ingredients, that is, the potato starch with the all-purpose flour and the baking powder.

    4) Gradually add this mixture using a flexible spatula, the famous MARISA!

    5) Prepare a 9.5-inch diameter pan by greasing the bottom and sides with a non-stick spray or butter and flour, or by using a piece of wet and well-wrung baking paper, and then pour the super soft peach cake batter

1) In this cake, we can add the fruit in pieces both in the batter and on the surface before baking it, as I did, but as always, decide as you like best!

2) If we want to enrich the flavor, we can also add almond flakes before baking this summer fruit dessert.
