This dressing requires fresh, high-quality ingredients and can be kept in the fridge well stored for a couple of days, no more!
Pestos are a great way to quickly dress pasta and we can prepare them in many ways and with many ingredients, especially herbs, vegetables, and nuts, combining good oil and blending everything even coarsely.

Ingredients
- 11 oz paccheri
- 14 oz datterini tomatoes
- 5 oz cow's ricotta
- 1.76 oz almonds
- 1.76 oz Grana Padano DOP
- 1 clove garlic
- to taste basil
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
Steps
1) Start the recipe by washing and cutting the datterini tomatoes in half and placing them in the immersion blender container.
2) Then add the almonds, the peeled garlic without the inner core, and the grated cheese.
3) Also add washed and patted basil with appropriate paper, the ricotta, salt, and pepper, then slowly add extra virgin olive oil and start the blender at a low speed, continuing but leaving the pesto a bit grainy: I personally like to feel the different textures, but prepare it as you like best!
4) As soon as the Sicilian pesto is creamy enough, taste it and adjust the salt and pepper.
5) In the meantime, put a pot of salted water on the flame where, once boiling, add the pasta and continue cooking until the paccheri is al dente.
6) Drain them while still moist and pour them back into the cooking pot adding the Sicilian pesto dressing and mixing well, adding more basil if desired.
7) Serve the paccheri with Sicilian pesto immediately, also bringing additional grana or parmesan cheese to the table according to your personal taste!

1) Since the dressing for Paccheri with Sicilian Pesto is prepared with ingredients added raw, it is clearly recommended if not mandatory to purchase fresh ripe products!
2) The Sicilian pesto in my opinion pairs well with short pasta shapes (sedanini, maccheroncini, penne, etc.) because it’s creamy and with long pasta, it might become a mess, take one spaghetti and you find a ball of stuck spaghetti but as always it is my personal opinion!
3) If you use ripe and firm tomatoes but with many seeds, it is advisable to remove them because they would make the pesto watery.
