I too have given in to a viral recipe on the web and prepared the rustic yellow peach galette, a very simple and homemade summer dessert that we can make with both fruit and vegetables using a ready-made base like puff pastry.
The cake called galette is as easy as it gets and could be made with eyes closed because the more lopsided it looks, the more it pleases!
We can also prepare it with a wholemeal base for an even coarser and rustic dessert and use all the fruit we find at the supermarket, adding if you like almonds and raisins before cooking the fruit galette.
Galette is a French term that indicates a kind of sweet or savory flat round focaccia, and the most famous one is the Galette Bretonne, which is similar to a crepe generally made with buckwheat and always with a savory filling.
The combination of ripe yellow peaches, brown sugar, and a pinch of ground cinnamon creates a sweet and aromatic filling while the rustic and irregular shape gives it a rustic and inviting appearance.
Perfect as a summer snack or after-meal dessert, this galette is a delightful way to celebrate summer at the table!

HERE IS THE RECIPE FOR THE RUSTIC YELLOW PEACH GALETTE, but since this is my first official galette, I suggest the recipes of other simple and quick fruit desserts like…

Ingredients
- 1 package puff pastry
- 6 peaches
- 50 g brown sugar
- 1 egg
- to taste ground cinnamon
- to taste butter
- to taste almonds (optional)
- to taste mint (optional)
Steps
1) First, I wash the peaches, cut them in half, remove the pit, and slice them, preferably to the same thickness, placing them in a bowl.
2) I add brown sugar and some ground cinnamon, mix well, and let it rest while continuing with the recipe.
3) I preheat the oven to 350°F, meanwhile, I unroll the ready-made puff pastry onto a 9-inch (24 cm) pie pan, keeping the parchment paper from the package.
4) The peaches will have released some juice, and I slowly arrange them in a radial pattern, leaving an outer edge of about 2-3 inches.
5) Once I’ve placed the peach slices, I close the rustic galette by folding the puff pastry edge over the fruit.
6) I beat the egg with a small fork and use a kitchen brush to glaze this border, sprinkling it with brown sugar.
7) I had a small amount of sliced almonds and scattered them randomly over the yellow peaches.
8) All that’s left is to bake my first rustic yellow peach galette for about 25 minutes, or according to your oven’s specifications.
9) I let it cool, and we’re ready to taste!

1) As I mentioned, we can prepare the galette with other fruits, and if we want to make this dessert very indulgent, before arranging the fruit slices, we can make a thin layer of custard or an almond cream or a light layer of crumbled amaretti mixed with a few pieces of butter.
