Quick Tuna Cake

The quick tuna cake is a simple savoury pie prepared in a few minutes with instant yeast for savory recipes and is soft and good as a bread substitute.

Personally, I made a sandwich with two slices of tuna bread adding also some mayonnaise and two slices of smoked scamorza, and with a nice cold beer, my lunch was very tasty!

The heat is coming, using the oven will soon become a big effort, but this quick savoury recipe good for lunch, dinner but also everyday snack is very, very fast, I would say that in 30/35 minutes at most everything is ready from preparation to tasting so… I RECOMMEND IT TO YOU!

If you want to make sandwiches to take to the beach or for a stroll for a snack, I suggest for convenience pouring the batter into a loaf pan so it’s easier to make slices to fill!

Ingredients for Quick Tuna Cake Recipe

  • 5.6 oz tuna in water (or in oil as you like)
  • 3/4 cup all-purpose flour
  • 3 eggs
  • 1 packet instant yeast for savory preparations
  • 1 tbsp extra virgin olive oil
  • 1/2 cup milk (optional)
  • 1/2 lemon (juice)
  • to taste salt
  • to taste pepper
  • to taste parsley

Steps

  • 1) For this super-fast savory recipe, first, I drain the chosen tuna and pour into a bowl the sifted flour with the yeast;

    2) Then I add the eggs, the extra virgin olive oil, and the milk (optional addition because the batter is quite soft and spreadable as it is), mixing well all the other ingredients listed above.

    3) I line the 7-inch mold with parchment paper and pour in the tuna savory pie mixture, leveling well, and then bake in a preheated oven at 356°F, letting it cook and brown well, the tuna cake with tuna in oil or in water.

    4) After the time for the baking of the savory focaccia with fish has passed, I let it cool and it is ready to accompany the meal, to make stuffed sandwiches, and for a savoury snack!

1) Use the tuna you prefer, in water or in oil, based on what you like and what suits your daily diet.

2) I put parsley but it might be better to add basil, which is more fragrant!

3) I didn’t want garlic or anything else but it might be a valid option, and I also suggest a couple of tablespoons of grated Parmesan or Grana cheese if you want a tuna bread that is saltier and clearly more caloric!

4) Nothing prevents you from adding also cooked ham cubes to the batter to make it even tastier!
