CARAMEL MOUSSE with No-Bake Tartlets

I made the caramel mousse with no-bake tartlets and I confess that the soft caramel sauce is a recipe I love, and the eggless caramel is even more addictive than dark chocolate, which is a real delight!

After making and tasting the caramel mousse, I thought it would be fantastic as a filling for small finger food-sized sweets and with cookies like pan di stelle, I made sweet tartlets, making the caramel mousse even more delicious and complete!

Nothing prevents you from making a no-bake crust like a sweet cheesecake, thus making a dessert for more people, even though tartlets with a cheesecake-like base (crumbled cookies mixed with butter about half the weight of the cookies) are very stylish to serve at the table, right?

  • 9 oz mascarpone
  • 12 oz sugar
  • 1 cup heavy cream
  • 7 oz water

FOR THE PREPARATION OF THE CARAMEL MOUSSE WITH NO-BAKE TARTLETS RECIPE

  • 1) In a saucepan, I poured the sugar and water, stirring well and placed it over low heat until you see the sugar caramelize with a beautiful golden amber color.

    2) In the meantime, I heated the heavy cream over moderate heat without bringing it to a boil.

    3) Once the caramelized granulated sugar is ready, I removed it from the heat and, while warm, I poured the previously heated heavy cream.

    4) I stir continuously and WITH ATTENTION because steam and caramel splashes will form!!!

    5) I placed the pan back on very low heat, letting everything blend carefully.

    6) Let the caramel sauce cool completely.

    7) Once perfectly cool, I put the mascarpone in a bowl (or mixer) and, turning on the electric whisks at low speed, I add the caramel sauce in a thin stream, creating a soft, creamy, and delicious caramel mousse!

    8) When ready to use it by mixing it with the mascarpone, it will be enough to leave it at room temperature or heat it for a few minutes in a bain-marie or microwave before proceeding to make the soft caramel foam!

    9) If you prepare, as I did, some tartlets with pan di stelle cookies or similar, before serving, you can add a drizzle of ready-made caramel topping that you can find in the supermarket!
