Liar’s Tortellini with 3 Ps

Today, after a long time, I went back to making fresh pasta and prepared the LIAR’S TORTELLINI WITH 3 Ps, meaning cream, ham, and peas!

The liar’s tortellini or surprises are nothing more than a square of pasta without filling, folded like a tortello, cappelletto, or tortellini, which I then dressed with a tasty and caloric sauce like the 3 Ps.

It’s like the main dish spaghetti with runaway clams where Runaway means escaped, in other words, pasta without mollusks!

LIAR’S TORTELLINI WITH 3 Ps

Ingredients

  • 2 eggs
  • 1.5 cups all-purpose flour
  • 2 oz cooked ham (diced)
  • 1/4 cup heavy cream (clearly not whipped!)
  • 1/2 cup frozen peas
  • 1/2 shallot
  • 1 tbsp extra virgin olive oil
  • to taste salt
  • to taste pepper

Tools

To make the pasta squares, I used the tool you see below, but I suggest this PASTA CUTTER, which also has the ability to cut the pasta with small scalloped edges, making it much prettier!

Steps

  • If you want to try making liar’s tortellini, I invite you to watch the video, although I think it’s quite intuitive to make this fresh egg pasta and for the sauce:

    1) in a preheated pan, I add the olive oil and chopped shallot, stirring and letting the vegetable stew, adding a drop of water to calm the sauté

    2) then I add the frozen peas with a ladle of water and cook

  • 3) in a second small pan I put a drop of oil and brown the diced cooked ham for 3/4 minutes

  • 4) meanwhile, in a high-sided saucepan, I put water and salt, and when it boils, I throw in the liar’s tortellini that will cook in a flash!

    5) I drain the handmade fresh pasta and put it in the pan with shallot peas, adding the diced ham and finally the fresh liquid cream

    6) I also add the grated cheese and mix well the first course of liar’s tortellini with cream, ham, and peas!
