Super Soft White Chocolate and Mascarpone Cream

This super soft white chocolate cream with mascarpone, no eggs, and no cooking, BECAUSE YOU JUST NEED TO MELT THE CHOCOLATE AND YOU’RE DONE!

On the blog, there are many DELIGHTFUL NO-COOK CREAM RECIPES that are delicious to eat by the spoonful but are amazing when used to fill simple cakes like sponge cake or a crumbly shortcrust pie!

SUPER SOFT MASCARPONE AND WHITE CHOCOLATE CREAM

Ingredients

  • 6 oz heavy cream
  • 1 cup mascarpone
  • 3.5 oz white chocolate

Tools

For stirring ingredients while cooking, I always use a SILICONE SPATULA LIKE THIS ONE

It is perfect for cooking, scraping, mixing and DOES NOT MELT, STANDING UP TO 478 °F!!!

  • Microwave Ovens
  • Bowls
  • Electric Whisks
  • Spatulas

Steps

  • I will be very brief, just like the preparation of the cream:

    1) Melt the roughly chopped white chocolate in a microwave or a double boiler with 3.5 oz of heavy cream.

    2) CAUTION: it should not boil but only come almost to a boil!

    3) Mix well, let it cool down, and place it in the refrigerator for at least 2 hours.

    4) After the chilling time, place the mascarpone in a mixing bowl or stand mixer.

    5) Start whipping with electric whisks while slowly pouring the cold cream and white chocolate mixture.

    6) Whip until fluffy and the super soft mascarpone and chocolate cream is almost ready…

    7) For me, the cream was too firm, so I added 2.5 oz of liquid cream to achieve a delicate and delicious mousse!

1) You can also increase the amount of white chocolate by 1.75 oz for a more chocolaty flavor!
