FOR THE PREPARATION OF THE RECIPE Potato Sticks Without Eggs and Flour

  • Easy and quick recipe some might call it clever, a word I don’t particularly like, but let’s proceed with these very few steps to make this potato-based finger food!

    1) Start with cold water, boil the potatoes, and I confess to speeding up the process, I peeled, washed, and cut them into wedges to accelerate cooking.

    2) I drain them when they can be pierced effortlessly with a wooden skewer or fork and let them cool.

    3) I mash them with a fork or potato masher and place them in a bowl.

    4) Now I add cornstarch to the mashed potatoes, mixing well.

    5) I make many long sticks just over 4-5 inches, and some I coat with sesame seeds for an even coating (which will unfortunately fall off in the pan…).

    6) Meanwhile, I heat the pan over medium-high heat with plenty of vegetable oil (peanut oil is optimal for its high smoke point), and when it’s ready (about 347°F/175°C), I start frying the boiled potato sticks without eggs and flour.

    7) They will roll and brown on all sides happily… Then I’ll place them on paper towels to remove the excess oil

8)…ready for tasting with a bit of sauce on the side!

Enjoy your crispy and tasty potato finger foods!

1) In the potato and cornstarch mixture, we can also add a bit of grated Parmesan, but be careful during frying as the Parmesan will add flavor but ensure not to burn the potato sticks!

2) Add some spices like paprika or turmeric to the mixture for a more flavorful touch!
