Today I prepared a simple and quick first course with penne with spinach, gorgonzola, and walnuts—an enveloping taste that really comes together in no time!
I bought some very tender fresh baby spinach, cleaned off the stems, and let them wilt after washing them in a little butter. They pair perfectly with the cheese mix (gorgonzola and mascarpone) I bought ready-made at the supermarket.
The crunchy note of the walnuts then completes and enhances the dressing… In short, it’s a special and genuine first course that I highly recommend!
These days, the gastronomist “of our own”, meaning my son Andrea, is abroad traveling with his father, and I’m cooking like crazy and experimenting with all sorts of ingredients and additions, strong, delicate, and spicy flavors like never before! Hi Andrea, I love you but… sometimes, eh eh!
PENNE WITH SPINACH, GORGONZOLA, AND WALNUTS

Ingredients
- 11 oz penne
- 7 oz mascarpone and gorgonzola (I got a block with both cheeses together)
- 5 oz spinach (fresh baby spinach)
- 8 walnut halves (to crumble over the dressing)
- 1/4 cup butter
- as needed cheese (grana or grated parmesan)
- 1/2 cup milk
- as needed salt
- as needed pepper

Steps
The recipe for this tasty and quick first course starts by quickly washing the spinach and blotting the moisture with a paper towel.
In a pan, I put the butter, and once it’s melted, I add the raw spinach and cook it quickly.
In another pot, I place the block of cheeses and with the milk create a fluid and delicious sauce.
I also add the spinach and a few crumbled walnut halves.
I put on the flame the saucepan with salted water, and when it reaches a boil, I cook the pasta.
I drain the penne al dente and moist and add them to the pan with the cheese and spinach sauce, mixing everything well.
I assemble the individual plates by adding a few pieces of walnut to each diner.
The final touch of grated grana makes this dish quick and tasty!
