A simple dessert without too many pretensions but equally tasty and pleasant, the star-shaped sablé with jam, which, with the stars, takes on a slightly more festive and Christmas-like air!
Since this is a simple dessert, I only used strawberry jam, but if you like, you can cover the bottom of the shortcrust pastry with frangipane cream, classic or chocolate custard, ricotta cream, or enriched with chocolate chips…
In short, it is a truly basic recipe perfect for breakfast or a snack, and it is also suitable for the little ones at home.
Sablé shortcrust pastry contains more butter than the classic shortcrust pastry and is often used for making fine pastries.

Ingredients RECIPE STAR-SHAPED SABLE’ WITH JAM
- 1 3/4 cups all-purpose flour
- 4 oz butter
- 1 egg
- 1 egg yolk
- 1/4 cup sugar
- 1 1/2 cups strawberry jam
FOR THE PREPARATION OF THE STAR-SHAPED SABLE’ WITH JAM RECIPE
In a bowl, I put the flour, sugar, and butter in pieces.
I mix the ingredients with my fingertips until I get a sandy dough.
Now I add the whole egg and egg yolk, and I knead to get a loaf which I then wrap in cling film and let rest in the refrigerator for about 2 hours.
After the rest time, I take the dough and let it acclimatize on a surface for 20/30 minutes.
I divide it into 2 parts (one of 1/3 and the other of 2/3) and roll out the larger part between 2 sheets of baking paper and place it in a pan of about 8 inches.
With the prongs of the fork I pierce the bottom of the sable, then I spread the chosen jam for the filling.
Still using the rolling pin and baking paper, I roll out the second loaf and with star-shaped cutters of different sizes, I make a few “holes” as I like, then I cover the jam.
All that’s left is to bake the sablé dough filled with strawberry jam at 338°F (170°C), letting it cook for 30/40 minutes or until the tart is fully cooked.
Then I let the filled dessert cool well and sprinkle with icing sugar and … enjoy your meal!
