- 3.2 cups all-purpose flour
- 7 tbsps extra virgin olive oil (+ additional for brushing before baking)
- 0.85 cups water
- to taste Maldon salt
- to taste rosemary (optional)

PREPARATION FOR FAST CRISPY BREAD RECIPE
For the preparation of these quick unleavened flatbreads I can make the dough either in the stand mixer or in a bowl with our hands….
I make a well or pour into the stand mixer the emulsified water with the EVO oil then I add the flour (and also the finely chopped fresh rosemary if I want the addition of the aromatic herb) and knead well with the hook or with palms until I have a soft dough that is not sticky and well combined.
I cover it with cling film and let it rest at room temperature for about 20/30 minutes.
After the resting time I divide it into as many small balls as preferred, depending on whether you want to make small flatbreads or thicker circles….
The oven will already be hot at about 390/430 °F and I am almost ready to bake…
I line a baking sheet with parchment paper arrange the crispy breads, brush them just a little with extra virgin olive oil and add a bit of Maldon flaky salt which I would say is perfect for this kind of recipes!
I bake for a few minutes letting the crispy breads rise and turn golden.
I let them cool for a few minutes and serve with all sorts of delicacies… mixed cold cuts, aged or fresh cheeses, a triumph of marinated vegetables, and…
