I cooked the soles in a pan very simply with capers and parsley achieving in 10 minutes a tasty and flavorful main course.

- 4 soles (ideally, about 250-300 grams per person)
- 2 bunches chopped parsley
- 2 cloves garlic
- 1/4 cup dry white wine
- 2 tbsp salt-packed capers
- 1/3 cup butter
- to taste salt
- to taste black pepper

FOR THE PREPARATION OF THE RECIPE SOLES with capers and parsley
For the preparation of the soles with capers and parsley, first of all, you need to have the soles cleaned …and I had this done by the lady at the fish department of the Famila store where I bought this fish.
With the cleaned soles washed and patted dry with kitchen paper towels, I start the recipe by putting the butter in a pan large enough to hold them all.
I also add the garlic cloves sliced thinly and let everything stew for a couple of minutes.
Then I add the soles to the pan browning them for a few minutes.
I pour the wine and let the alcoholic part evaporate.
I add to the preparation the desalted capers (soaked in water for a few minutes and well rinsed) and adjust for salt and pepper.
I continue cooking the prepared soles with capers and parsley for about 7-8 minutes (mine were small, so…).
I finish and serve the soles cooked in a pan adding a sprinkle of fresh parsley, and the recipe is ready to be enjoyed!
It’s a quick, simple, and tasty dish, and if you find plump soles… it’s even more appetizing!
