This Roman-style semolina gnocchi with salmon recipe is not only very simple but also a different way to enjoy a classic dish from our cuisine: semolina gnocchi.
It was created spontaneously at a friend’s house: I wanted to use semolina to make simple gnocchi, she had smoked salmon that was expiring that day, and in a flash, we thought of combining the two ingredients.

Ingredients
- 8.8 oz semolina
- 1 qt milk
- 7 oz smoked salmon
- 2 egg yolks
- 7 oz béchamel sauce
- to taste salt
- to taste pepper
Recipe Preparation: Roman-style Semolina Gnocchi with Salmon
To prepare this dish of semolina gnocchi known as Roman-style, first bring the milk to a boil with a pinch of salt,
Sprinkle in the semolina gradually and start stirring vigorously, continuing for about 10 minutes until cooked.

Let it cool for a few minutes and then add the egg yolks one at a time, continuing to stir.
Now add 5.3 oz of chopped salmon and mix everything well.
Now pour the semolina onto a surface protected with wet parchment paper, squeeze it, then, using another piece of paper on top (to prevent sticking), spread the semolina to a height of about 0.4 inches.
With clean and wet hands or a knife with a wet blade, level the semolina and salmon mixture, making it smooth and even.
Now, with a moist cookie cutter or a similar round tool, cut out the gnocchi and place them in a previously buttered tray.
Now pour the béchamel with the remaining finely chopped smoked salmon, season with salt, and add a few knobs of butter.
Bake for about 15 minutes at 392 °F, just enough time to brown everything!
