Wash and trim the eggplants.
Cut them first into thick slices then into sticks.
In a colander put the eggplant sticks with a handful of coarse salt for about 30 minutes.
After the time has passed, remove the formed liquid and pat them dry with paper towels.
Then pass them in the coating mix, sifting the powders if too abundant on the eggplants.
Fry them in oil, adding only a few at a time to the pan so as not to lower the temperature, then drain them on appropriate paper.
Adjust the seasoning and serve at the table!
