Spaghetti with salmon and arugula without cream is the classic hot first course that is prepared in just the time it takes to cook the pasta and it is very, very tasty!
The slightly bitter taste of ARUGULA goes wonderfully with the more enveloping and sweet taste of SALMON, and just a drizzle of good oil is enough to have a delicious and very appetizing seasoning!
It’s summer and today in Bologna, after leaving the car parked for about a couple of hours, the temperature inside was 111 degrees Fahrenheit, an incredible and almost unbearable heat, so… Hooray for this “hot” pasta that’s perfect for spending just 10 minutes in the kitchen!
You can also make this seasoning with salmon fillets perhaps leftover from a seafood second course like this breaded salmon, although the taste will be much more delicate!
If you want a creamier and certainly more caloric seasoning, add a small carton of cooking cream and toss everything together just after draining the pasta.
This salmon and arugula seasoning is also suitable for short pasta dishes like macaroni, gramigna, and others: as always, the final choice is yours!

Ingredients
- 5.6 oz spaghetti (large squares)
- 1.8 oz smoked salmon
- 1 1/2 bunch arugula
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
Recipe Preparation Spaghetti with Salmon and Arugula
For this very easy and quick recipe, I immediately put a pot on the flame to cook the SPAGHETTI and proceed to prepare the salmon and arugula.
I wash and pat dry the arugula with paper towels, breaking it into several pieces simply with my fingers.
I move on to slicing the SMOKED SALMON into strips or pieces not too small, and season it with some oil, a pinch of salt, and pepper.
I cook the pasta for the minutes indicated on the package and, when draining it, I reserve a small glass of the cooking water to cream the spaghetti.
I place the seasoned smoked salmon and the ARUGULA in the pan while cold; I add the pasta, gradually adding the cooking water to tie and cream everything, with more oil if needed.
I adjust the salt and pepper and serve the spaghetti with salmon and arugula, an easy and very, very tasty dish!
As I said at the beginning, if you want a more enveloping sauce, add some cream, or some robiola or mascarpone!
