Summer is coming fast, hot and humid, sometimes unbearable, especially if you’re in the city surrounded by concrete and vacations are a distant mirage…
It’s time for simple and tasty recipes like this light salad with cherry tomatoes, avocado, and feta, fresh and quick, a flavorful mix that’s easy and even tastier if made in advance to enhance its taste and aroma!
I’ve added yellow and red cherry tomatoes, creamy and delicious ripe avocado, and small diced feta that mixes and seasons the whole dish with the dressing!
Don’t forget aromatic herbs like parsley to make this unique cold dish truly appetizing!

Ingredients for the Light Summer Salad with Cherry Tomatoes, Avocado, and Feta

  • 10.58 oz cherry tomatoes (mixed yellow and red)
  • 1 cucumber (peeled, sliced)
  • 1 avocado (peeled, pit removed)
  • 1 package feta (diced)
  • to taste chopped parsley
  • to taste extra virgin olive oil
  • to taste white wine vinegar (a small amount)
  • to taste salt
  • to taste pepper

Preparation of the Light Salad Recipe with Cherry Tomatoes, Avocado, and Feta

  • For this simple and appetizing salad with mixed cherry tomatoes, avocado, and Greek feta, start by washing the tomatoes and then cutting them in half.

  • Peel the cucumber which should be firm and fresh, and then cut it into not too large wedges.

  • Drain and pat the Greek feta dry with paper towel and dice it… it’s a cheese that crumbles easily even with fingers, so proceed as you like!

  • Place the ingredients in a bowl, add a generous amount of chopped parsley, and dress with a classic vinaigrette of vinegar, EVO oil, salt, and pepper.

  • Store in the fridge until it’s time to serve to let it season even more and be cooler and gourmet!
