The soft embrace ring cake is a simple, genuine, homemade dessert that I enriched in the chocolate part with some dark chocolate pieces that I also added on top before baking.
You can further vary the embrace cake by adding white chocolate chips and/or ruby, or by adding sultana raisins previously soaked in water or a water and rum mix, or by adding small pieces of mixed candied fruit…

Ingredients for Soft Embrace Cake Recipe
- 4 eggs
- 3 1/2 cups all-purpose flour (And a little more for the pan)
- 1 tbsp vanilla extract
- 1 tbsp lemon zest
- 1 1/4 cups sugar
- 2 tbsp unsweetened cocoa powder
- 1 cup fresh whipping cream (Added, not whipped)
- 1 packet baking powder
- 1/4 cup vegetable oil (And a little more for the pan)
- 2 oz 70% dark chocolate (chopped and optional)

Preparation Steps for Soft Embrace Cake
For the soft embrace cake, first crack the eggs into a bowl, add the grated lemon zest, and the vanilla.
Start to beat and add the sugar, then beat everything with the mixer until you get a soft and frothy mixture.
While beating, pour in the cream and then the vegetable oil.
Continue mixing the batter and add the sifted flour and baking powder in multiple additions.
This will give you a smooth and lump-free batter.
Divide the batter into two parts of approximately the same weight (my yellow part invaded the chocolate one…) and add 2 tablespoons of sifted unsweetened cocoa powder to one of the parts.
Mix well and if… if it turns out to be a less fluid batter than the “plain” one, add a splash of oil or cream, i.e., liquids already in the batter.
Add some chopped dark chocolate to the cocoa part, and after oiling and flouring the cake pan, pour the two batters separately and level them well.
Now I sprinkled the chocolatey half with the remaining chopped dark chocolate and then baked at 350°F in static mode for about 40/45 minutes or depending on your oven’s characteristics.
Once baked, let it cool, then remove and unmold the soft embrace cake, a classic ring cake not too sweet and very good!
