Egg and Potato Pie with sausages is a tasty little recipe that can be a main course or, if cut into squares as I did, an appetizer. It’s a preparation you can make in advance and serve either hot or at room temperature.
It’s not low-calorie, haha, but it’s tasty, and you’ll see that even the little ones at home will like it!
I fried the potatoes, but then I baked the egg and sausage pie, letting it cool before serving.
I used some small sausages that were left in the fridge (and which you won’t often find at our house), but you can use the chubbier ones, pork ones, chicken ones, or even those stuffed with cheese!
As a portion, I set it for 10 people because they are caloric and filling and will be added to other appetizers to give our guests more choices for a rich buffet of appetizers.

- 3 potatoes
- 6 eggs
- 7 oz sausages
- 1 shallot
- to taste chives
- to taste extra virgin olive oil

Preparation of the Egg and Potato Pie
For the Egg and Potato Pie recipe, I peel the potatoes, wash them, dry them, and cut them into more or less regular chunks (^_^).
I put a little seed oil in a pan, add the chopped shallot, and sauté for a few minutes.
I also add the potatoes and let them sauté to soften and form a crust.
I slice the sausages into rounds and add them to the now golden and tender potatoes, and continue cooking for about 3/4 minutes.
In a bowl, I beat the eggs and season them with salt and pepper.
I drain the cooking base from the potatoes and sausages and add them to the beaten eggs, mixing the mixture and also adding chopped chives.
I line a baking dish with parchment paper, pour this mix, and bake at 350°F, letting it cook for about 25/30 minutes depending on your oven’s characteristics.
Once cooked, I let it cool and cut the sausage and potato pie into squares before serving it as an appetizer.
A bit caloric but tasty, this baked savory pie!

P.S. I only use corn oil for frying because one of my sisters is highly allergic, and even though she doesn’t often come to Bologna (comeeeeeeee), I would never want her to taste something and feel unwell because of me!
