Today, penne with broad beans and bacon , a seasonal pasta dish with a vegetable I don’t particularly love but reminds me of my mom, who used to eat a lot from our garden, simply opening the pod while I watched nearly horrified!!
WHAT ARE THE BENEFITS OF BROAD BEANS?

Ingredients
- 10.5 oz penne rigate
- 8.8 oz CLEANED broad beans
- 3.5 oz bacon (diced)
- 1 shallot (finely chopped)
- to taste pecorino romano (grated)
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

Preparation of the Penne Recipe with Broad Beans and Bacon
For the penne with broad beans and bacon, you need cleaned broad beans, so…
remove the broad beans from the pod and boil them in a saucepan in plenty of salted water for about 5 minutes, reserving a ladle of cooking water.
Once they are cool, remove the skin covering them until finished.
In a pan that will later hold the pasta and sauce, add a drizzle of extra virgin olive oil and when it sizzles add the finely chopped shallot.
Continue to cook gently softening it, adding a little cooking water if needed.
Also add the diced bacon to the pan and brown it for 3/4 minutes, then add the broad beans.
Stir well and turn off the heat.
Meanwhile, bring a pot of salted water to a boil for cooking the penne.
Drain the pasta, pouring it directly into the pan with the sauce, seasoning with salt and pepper.
Add the grated pecorino romano and a splash of cooking water, raw oil if needed, and serve immediately at the table.
