A dish, or rather a flavorful, strong, tasty condiment for tagliatelle with ham and lemon, typical of my Romagna, sad and sunny. A delicate thought comes to mind for the passing a few days ago of the maestro of liscio Raul Casadei.
I chose to cook this dish using the egg pasta tagliatelle from Luciana Mosconi, especially the variety Le delicate Frappe, which indeed have this very beautiful jagged edge.
This company is from Marche and boasts a particular method of double kneading to prepare its entire production of dry and fresh pasta.
The pasta made with Italian category A eggs after the double kneading is rolled out with a special adjustable lamination process similar to homemade rolling pin.

Ingredients RECIPE TAGLIATELLE WITH HAM AND LEMON
- 9 oz dry egg tagliatelle (for me, Luciana Mosconi Le delicate Frappa)
- 5.3 oz prosciutto (finely ground)
- 3.5 oz butter
- 2 lemons (zest grated)
- to taste chopped parsley
- to taste salt
- to taste pepper

Preparation
For the Romagna style tagliatelle with ham and lemon, first put a casserole with salted water on the stove.
In a large pan that can contain the entire amount of dry tagliatelle, I put the touch of butter and once melted, I add the finely ground prosciutto ham.
I let it brown gently so as not to dry out the ground prosciutto or gambuccio.
I also add the lemon zest and perhaps a splash of juice to give a more intense flavor.
In the meantime, I throw in the pasta and once it is al dente, I transfer it into the pan with ham and lemon zest.
I mix or rather toss the pasta and add chopped parsley.Serve immediately, adding a small amount of butter for the more indulgent….
