Quick Sautéed Spinach

Quick Sautéed Spinach, a side dish ready in 10 minutes with a vegetable that doesn’t often make it into my kitchen but is known to be full of nutrients and important for iron intake, especially with the addition of lemon juice which aids its absorption!

SPINACH AND RICOTTA GNOCCHI
WHAT ARE SPINACH?
Spinach are a low-calorie vegetable with high fiber content and completely cholesterol-free. They have 23 calories per 100 grams of product, and the presence of vitamin C and folates makes them a useful vegetable to boost the immune system and recommended during pregnancy.
HOW TO CLEAN SPINACH?
 Spinach are easy to clean, whether they have small leaves or larger ones.
When bought fresh, they should be cleaned no later than the day after purchasing to avoid some leaves darkening and wilting quickly.
It’s essential to wash them very well after placing them in a simple colander under cold running water. Once washed, the tough ends should be removed with a small knife.
HOW TO CONSUME SPINACH?
The most nutritionally recommended cooking method is steaming, which keeps them as natural and wholesome as ever.
Alternatively, you can boil them in a very small amount of water or, as I did in this recipe, sauté them in a pan with a little olive oil, a clove of garlic, a bit of chili pepper, and thus RAW, just washed!

Ingredients

  • 2.2 lbs fresh spinach
  • 1 red bell pepper
  • 2 cloves garlic
  • to taste chili pepper
  • to taste salt
  • to taste extra virgin olive oil

Preparation of Quick Sautéed Spinach Recipe

  • To prepare the quick sautéed spinach side dish first, wash the spinach leaves thoroughly by placing them in a colander under running water.

  • Now wash and clean the red bell pepper, removing the seeds and inner filaments.

  • In a pan that can hold the spinach, put the garlic and a little olive oil.

    Once it is golden, add the bell pepper cut into medium-sized cubes.

    Continue cooking for 5/6 minutes to soften the bell pepper pieces.

    Cooked but still crunchy, place the bell pepper on a plate and continue the recipe.

    In the same pan, add the washed spinach with the little water remaining on the leaves.

  • Adjust with salt, add the chili pepper and cover with a lid, letting it cook over medium heat for a few minutes so that the spinach is tender and all their natural water has evaporated.

  • Now add the previously stewed bell pepper cubes, stir one last time, and serve at the table.

    Easy and quick, the sautéed spinach side dish can be paired with both meat and fish dishes and is appetizing!
