Shortcrust Pastry Bows are simple homemade cookies, great anytime and delicious!
I’ve tried so many shortcrust recipes in my life, some with a pinch of baking powder, without baking powder, sandy, whipped, and… but for all recipes, I’d say the base is the same:
1 – all-purpose flour with low protein content or whole wheat;
2 – eggs (whole, yolks, or mixed);
3 – butter, but also oil and margarine;
4 – vanilla bean;
5 – grated lemon peel;
6 – sugar or fructose.

Shortcrust pastry is the base for many sweet preparations and already in the 18th century, a similar dough was used initially for savory preparations such as meat pies and timbales.

The proportions of the various ingredients can vary, giving a different note to the dessert because more butter will give more flakiness, more sugar instead will give more crunchiness.
Baking powder is generally not added, and if so, only to make the shortcrust softer.
You have to be very quick in kneading the ingredients because even the heat of your hands could spoil the preparation.
The shortcrust pastry dough can be flavored with lemon zest, orange zest, cinnamon, or vanilla; it can be stored in the refrigerator for 2/3 days well protected by food plastic wrap and even frozen in the freezer.
Shortcrust pastry bows with jam and Nutella (in my case) are simple and genuine Sicilian pastries filled also with pistachio cream, a typical and delicious product of this beautiful island!
These cookies are very good, addictive, and also suitable for the little ones at home!

SHORTCRUST PASTRY BOWS

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 7 tbsps butter
  • 1 egg (medium)
  • 1 1/2 lemon (zested)
  • 1 pinch salt
  • to taste strawberry jam
  • to taste Nutella®

Tools

  • Cookie Cutter
  • Parchment Paper
  • Baking Tray
  • Bowl

THE INGREDIENTS MUST BE AT ROOM TEMPERATURE

  • To prepare the shortcrust pastry in a mixing bowl, place the cold diced butter at the center, then add the eggs, grated lemon zest, and a pinch of fine salt.

    Quickly mix all the ingredients to form a dough ball that you wrap in food plastic wrap and let rest in the refrigerator for about 30 minutes.

  • After the resting time, roll out the shortcrust pastry placing it between two sheets of parchment paper and using a rolling pin on a pastry board.

  • With a cookie cutter or even a simple glass, cut out many circles for me, scalloped with a 2.5-inch diameter.

  • In the center of each circle, put the filling you like: for me strawberry jam and Nutella!

  • Fold each cookie into a bow shape, and as I prepare them, I place them on a baking sheet lined with parchment paper.

  • Now just bake at 356°F for about 20 minutes or according to your oven’s characteristics.

    I resisted the temptation to dive right in for a taste and…allowed the shortcrust bows to cool on a wire rack.

  • Finally, I sprinkled the filled shortcrust cookies with powdered sugar and serve them…

    Excellent for accompanying tea and coffee and to enjoy when you crave something good and simple, suitable for everyone!!!
