Soft apple biscuits not too sweet with a dough that’s a bit like a cake, suitable for a snack or breakfast with a nice cup of hot tea or a meditation infusion.
I flavored the dough with a pinch of ground cinnamon and vanilla, but you can also add some organic or untreated lemon zest.
The dough of the soft apple biscuits is soft but not too much, so if your flour has a different absorption rate than mine, add a splash of milk to make it a bit more fluid.
As someone who occasionally enjoys a drink, I would also suggest a splash of light rum in the mixture to give it that slightly more aromatic taste.

We can use vanilla bean, vanilla, ground cinnamon, lemon zest, a pinch of freshly grated ginger!

Perhaps add pine nuts, raisins… and adjusting the mixture by certainly adding some milk!
If we prefer, we can put the mixture in muffin molds to have muffins and therefore make them rise in height instead of making them cookies.

  • 1 apple (for me Golden)
  • 70 g sugar
  • 100 g butter (to melt)
  • 2 eggs (medium)
  • 5 g baking powder for pastries
  • 240 g all-purpose flour
  • 1 packet vanilla
  • to taste milk (only if needed to soften the dough I didn't use it)
  • 2 pinches ground cinnamon

  • Put the eggs and sugar in a bowl.
