The Walnut Cookies in Air Fryer are quickly prepared with few ingredients and bake in no time, with a slightly crunchy exterior and soft interior. The Air Fryer, indeed, allows for even and quick cooking, perfect for those who want a wholesome snack or a dessert to serve after meals, in record time.
These cookies are ideal for breakfast, to crumble into yogurt, or to enjoy with a cup of tea or coffee. The walnuts provide an intense aroma and a pleasant crunch, making every bite a small moment of pleasure.
You will love them not only for their taste but for their simplicity, making them suitable for those not familiar in the kitchen. They contain no butter or flour: you’ll savor the full flavor of the walnuts.
A bowl, a spatula, and your hands will be the only tools you’ll need. Just like for orange cookies, you form balls that will be covered in powdered sugar and immediately baked, no resting or waiting.
Double the quantities if you want to make more or if you want to use the oven for baking. I’ll leave instructions at the end of the recipe.

Ingredients for 12 cookies
- 150 g walnut kernels
- 75 g sugar
- 1 egg white (about 35 g)
- 1 pinch salt
- as needed powdered sugar (for finishing)

- 1 Mixer
Steps
Preparation of Air Fryer Walnut Cookies
Finely chop the walnuts in the mixer
Pour them into a bowl with the sugar, egg white, and a pinch of salt, and mix with the help of a spatula.
You will get a sticky mixture
Moisten your hands, take small pieces of dough, and form balls the size of a walnut
Coat them completely in powdered sugar
As you prepare them, transfer them to a baking sheet or tray
Preheat the air fryer to 340°F for 2/3 minutes and cook with the bake or air fry program for 5 minutes
After the first bake, without opening the door, lower to 320°F and continue for 8/10 minutes
Remove from the oven and let cool before transferring to a plate

Storage Tips and Variations
Walnut Cookies can be stored for several days in a biscuit tin, tin box, or airtight container, preferably in glass
You can choose to double the quantities for more cookies and bake them in batches. In this case, refrigerate the ones you won’t bake immediately, always after rolling them in powdered sugar. The next day, before baking them, roll them in powdered sugar again to make the cracks visible like freshly made cookies.
Oven Baking
Preheat the oven to 375°F if static and 340°F if fan-assisted, baking at these temperatures for the first 5 minutes. Without opening the door, continue at 340°F in static mode for 10 minutes and at 320°F in fan-assisted mode, also for 10 minutes
