Today cookies with pistachios and chocolate, crispy and delicious little cookies with crushed nuts and a small filling of melted dark chocolate in the microwave or bain-marie, ideal for a snack and to accompany a steaming cup of tea!
The temperatures have dropped suddenly and sometimes I treat myself to a tea in the afternoon and these shortbread cookies are perfect for the pastry tray.
At home, we are not big cookie consumers (except for Pavesini and rice ones) but these treats were greatly appreciated and I highly recommend them.

Ingredients
- 3.5 oz butter
- 1.75 oz butter
- 1 medium egg
- 1 cup all-purpose flour
- as needed crushed pistachios
- as needed dark chocolate (or Nutella)
- as needed pistachios (whole)

Preparation
In a bowl, put the soft butter and mix it again with a spatula.
Add the sugar and mix well, also adding the egg yolk.
Sift the flour and pour it over the butter, sugar, and yolk mix and while kneading well, make it into a dough.
Preheat the oven to 320°F and proceed to line the baking tray with parchment paper that we will use for baking the pistachio and chocolate cookies.
In a deep dish, put the remaining egg white and in another, pour the crushed pistachios to have everything handy to form the shortbread cookies.
Make many balls of dough about 18/20 grams each, and first dip them in the egg white and then in the crushed pistachios.
As we prepare them, place them on the tray and with a finger, make a dent in the center of each cookie, where we will later put the melted chocolate.
Once all the dough is used up and the cookies with pistachios and chocolate are placed on the tray, bake them for about 25 minutes or according to your appliance’s settings.
Once baked, let them cool completely and then fill the shortbread cookies with a bit of melted dark chocolate or Nutella.
Also, place a pistachio on top of each little cookie and arrange them on a tray to accompany tea or coffee.
