Grilled Caprese Flatbread

It’s not a recipe in the strictest sense, the grilled caprese flatbread is just a simple idea for a dish that pleasantly helps clear out your fridge!

I used some slices of turkey roast, cherry tomatoes leftover from a salad in the fridge with fresh basil.

Of course, with a base like a crispy flatbread made on the grill, you can add anything and everything …

You can make a more “decadent” flatbread with deli meats, cheeses, marinated artichokes, or other similar vegetables, or you can “just” spread some light creamy cheese perhaps enhanced with a nice chop of parsley, mint, and basil with a lean slice of prosciutto or bresaola, or … take a look in the fridge, there’s surely something left in good condition, and carefully assemble the grilled caprese flatbread, I know you can create great things!

Grilled Caprese Flatbread

Ingredients

  • 2 crispy flatbreads
  • 12 cherry tomatoes
  • 4 slices turkey roast (or cooked or raw or …)
  • to taste basil
  • to taste extra virgin olive oil
  • to taste salt
  • 4 mozzarella balls

Preparation

  • To prepare the grilled crispy flatbread wash and cut the cherry tomatoes into wedges.

    Place them in a bowl and season with extra virgin olive oil, plenty of basil, and a pinch of salt.

  • Heat the flatbreads on a hot grill on both sides.

    Place them on serving plates and proceed to fill.

  • Pour the seasoned tomatoes over the grilled Romagna flatbreads and add rosettes made with the slices of turkey roast.

  • Add a drizzle of oil, a pinch of salt, more basil if you like, and serve immediately!

    To measure the oil, I bought a spray bottle that seasons perfectly without overdoing it and is very useful!

    The crunchiness of the Romagna flatbread quickly passed on the grill is very pleasant, and this dish is very summery and full of flavor!
