Fresh and Quick Appetizer …a delicious glass that can be prepared in advance for a perfect appetizer for all seasons, just spiced with oregano and with Greek feta, tuna, cherry tomatoes, and cucumber wedges.
Don’t like the strong taste of typical Greek cheese?
Use mozzarella instead, maybe letting it drain the water to avoid a soup in the glass, or use the block mozzarella for pizza, more compact and less watery.
My appetizer glasses are quite full, almost a real salad and not just a salty interlude…
Use other herbs if you don’t like dried oregano; you can add parsley, basil, but also mint, and thyme…

- 7 oz canned tuna in oil (drained)
- 16 cherry tomatoes

Preparation
• For this layered appetizer glass, I used cherry tomatoes cut into wedges, wild-drained canned tuna, and feta cut into cubes.
• We peel the cucumber and cut it into slices not too thin and then into wedges.
• We compose the glasses of the fresh and quick appetizer and then place them in the fridge until it’s time to serve them.
• Just take it out 15 minutes before use and dress the appetizer with extra virgin olive oil, salt, and pepper.
Add a pinch of oregano and serve.
• I served the fresh and quick appetizer with some appetizer forks to make tasting easier…
Nothing prevents you from serving this appetizer salad in single-serving bowls…
