Parker House Rolls


Parker House Rolls are special rolls that pair well with both sweet and savory dishes.

They are generally made as small rolls like I did, or as circles that are then folded in half. I enjoyed them with hazelnut cream and double honey, wildflower, and berry jam!

What is the origin of Parker House Rolls?

It seems that the baker of the Hotel Parker House (today Omni Parker House), rather upset while working, threw the leftover dough from the day’s bread into the oven haphazardly!

After baking, he found them light and fluffy but with a crispy crust and buttery, and he fell in love with them. Today, Parker House Rolls are typical and characteristic of Boston and the New England area in the United States.

The hotel was founded by Mr. Parker in 1855, and over the years, many famous personalities such as Henry David Thoreau, Charles Dickens, Judy Garland, and many others have stayed there.

It also seems that the kitchen brigade of the hotel is credited with creating the Boston Cream Pie, the official dessert of the state of Massachusetts. 

These delicious Parker rolls have a special taste that goes well with savory dishes like roast or even jam for breakfast!

As always, I find 2000 defects in my recipes after making them… so I could have made the rolls smaller; they would have been even more charming to look at, but they are soft, and the ingredients are well-measured, so I’m satisfied!

Ingredients PARKER HOUSE ROLLS RECIPE

  • 3/4 cup Milk
  • 1/4 cup Butter
  • 1/4 cup Sugar
  • 1 Medium egg
  • 2 3/4 cups All-purpose flour
  • 0.42 oz Fresh yeast
  • 1 tsp Salt
  • 1.4 oz Butter (to brush on the rolls as soon as they come out of the oven)

Preparation PARKER HOUSE ROLLS RECIPE

  • • In a saucepan over moderate heat, melt the sugar and butter in the milk.

    Once melted, remove from heat and let cool.

  • Pour this liquid into a bowl and add the egg and fresh yeast.

  • Begin mixing by adding the flour and lastly the salt.

  • • Knead well until you have a smooth and homogeneous dough.

  • • Now make a dough ball that will be covered and protected from drafts, and let it rise until it has doubled in volume, about 2 hours.

  • • After the time has passed and the dough ball is well risen, roll it out to a thickness of about 1/8 inch.

  • • As you can see, I made strips of dough about 4 to 5 inches long, and then I made rolls… large rolls that I placed in a baking tray lined with parchment paper.

  • I covered them with a dishcloth and let them rise for another 30 minutes or so.

  • • Now just bake the Parker House Rolls in an already hot oven at 350°F for about 20 minutes in static mode.

  • • As soon as they are cooked and come out of the oven, brush them with melted butter and serve them warm at the table!

  • For me, they accompanied jam and coffee with milk for breakfast, but they are truly very neutral so they pair well with anything!
