Ingredients for Christmas Tree Snacks

  • 3 eggs
  • 1/2 cups granulated sugar
  • 1/4 cups unsweetened cocoa powder
  • 2/3 cups all-purpose flour
  • 1/4 cups sunflower seed oil
  • 1 tsp vanilla extract
  • 1 pinch fine salt
  • 1 tsp baking powder
  • 1 cups mascarpone
  • 3 tbsps Nutella®
  • 5 oz dark or milk chocolate
  • 5 oz white chocolate
  • to taste Christmas sugar sprinkles

Steps for Christmas Tree Snacks

  • To make this delicious Christmas tree snack, start by making the batter. In a large bowl, beat the eggs with the sugar and vanilla extract for 15 minutes until they are frothy and whitish, then gradually add the sunflower seed oil while continuing to whisk. Finally, add the previously sifted all-purpose flour and unsweetened cocoa with the baking powder and salt, then mix again with a spatula for a few minutes until you obtain a smooth and homogeneous mixture. Line a rectangular baking tray or sheet pan (12×16 inches) with parchment paper and pour in the mixture, leveling it well with a flat spatula. Bake in a preheated static oven at 350°F for about 15-20 minutes. When the base is ready (obviously do the toothpick test), turn off the oven, take it out, and let it cool.

  • In a bowl, mix the mascarpone and Nutella with an electric whisk until you get a frothy and homogeneous mixture.

  • With the help of a Christmas tree-shaped cookie cutter, cut out as many shapes as in the photo. There should be a total of 14, but obviously, this depends on the size of the cookie cutter you have available.

  • Place the mascarpone and Nutella cream into a piping bag and fill each base, then close with the other shape like a sandwich. We will get 7 snacks in total, which we will place on a tray and then put in the fridge to firm up for 1 hour. After the resting period, melt the dark and white chocolate separately in two bowls in a double boiler. Glaze each snack as desired and decorate the surface with colored Christmas sugar sprinkles. Let them dry at room temperature or in the fridge to speed up the process.

STORAGE, TIPS AND NOTES

The snacks can be made in advance and stored in the fridge for 2-3 days due to the mascarpone. If you want, you can change the shape and use a star-shaped cookie cutter instead of a Christmas tree and omit the mascarpone filling, opting for simple spreadable cream so you can store the snacks outside the fridge without any problems for several days.
