Today, easy homemade crackers seen and immediately remade in a magazine which… I don’t remember because in these days of coronavirus quarantine isolation I buy more magazines than usual and I got lost!!!!!
It’s a very simple recipe and I served these CRISPY PASTRIES with a tuna and creamy cheese mousse that we greatly enjoyed…
I suggest other savory mousses like:

INGREDIENTS FOR EASY HOMEMADE CRACKERS RECIPE
- 2 cups All-purpose flour
- 1/2 tsp Fresh yeast
- 2 tbsp Extra virgin olive oil
- 1 tsp Salt
- 1/2 cup Water

FOR THE PREPARATION OF THE EASY HOMEMADE CRACKERS RECIPE
On the work surface or in a bowl, mix the flour with the salt using a hand whisk, blending well.
Add crumbled fresh yeast with extra virgin olive oil and water, adding the liquid gradually.
Make a dough ball that should rise covered for about 1 hour.
After the time has passed, roll out the dough to a thickness of about 1/8 inch.
With the pastry wheel, cut out rectangles of about… as you like, keeping the same size for all crackers for even cooking.
Now, using a fork, make some holes, then cover with a cloth and let rise for another 20 minutes or so.
Now just bake in a preheated oven at 375°F for about 8/10 minutes, considering that the thinner the cracker is, the faster it bakes.
Once cooked, let them cool and serve!
I served them with a tuna mousse made of 160 grams of well-drained tuna in oil, 170 grams of creamy cheese, 2/3 anchovies in oil, and some well-rinsed pickled capers.
Adjust for salt and pepper and… yum yum!!
