Rustic cookies with vin santo and chocolate without butter and eggs... the recipe is from my super friend, confidant, almost-mother Paola, who makes them for her family and especially for her granddaughter Lucia!
It’s a quick preparation meaning you throw all the ingredients together, mix without any special attention, and then place small heaps on a baking sheet lined with parchment paper and into the oven!
You get quite a few with these quantities, but if you manage not to devour them, they keep for several days, so let’s proceed to make these egg-free and butter-free delightful cookies!!

Ingredients for RUSTIC COOKIES WITH VIN SANTO AND CHOCOLATE WITHOUT BUTTER AND EGGS
- 4 cups All-purpose flour
- 1 cup Sugar
- 2/3 cup Corn oil
- 3/4 cup Vin santo (for me, Tanit from Pantelleria)
- 1 cup Chocolate chips (or the same amount of chopped dark chocolate)
- 1 packet Baking powder

Preparation
The recipe is very simple… Put all the ingredients in a nice big bowl and mix well; the dough will still be rustic and not smooth and homogeneous.
Line a baking sheet with parchment paper and then place distant heaps of cookies with vin santo and chocolate without butter and eggs.
Then just bake in a preheated oven at 356°F for the time necessary for the cookies with vin santo and chocolate to become nicely golden.
Let them cool down and then they’re ready for breakfast and/or snack!
The alcoholic part of the vin santo evaporates during cooking, leaving a delightful and pleasant aroma…
