  • 3/4 cup butter
  • 3/4 cup sugar
  • 7 oz almonds
  • 4 eggs (medium)

Preparation Flourless Caprese Cake Recipe

  • In a bowl, put the butter at room temperature with 3/4 cup of sugar.

    Beat with an electric mixer until light and fluffy.

  • Separate the yolks from the whites and add the “yellows” one at a time to the butter and sugar mixture.

    Mix using the electric beater.

  • Chop the dark chocolate and melt it in a double boiler or microwave.

    In a processor, also grind the almonds with the remaining sugar.

  • To the butter, sugar, and yolk mixture, add the coarsely chopped almonds not too finely and the melted dark chocolate.

  • Beat the egg whites until stiff and add them with a flexible spatula using movements from bottom to top.

    Pour the mixture into the previously buttered and floured pan, leveling everything well.

  • Bake in a preheated oven at 350°F and cook for about 45 minutes or depending on your oven’s characteristics.

  • Once cooked, the toothpick test will confirm if done, turn off the oven and let it cool completely.

    Garnish with powdered sugar and serve at the table, perhaps with a nice dollop of whipped cream!
