PARMESAN BREADED EGGPLANT RINGS

Today I prepared an absolutely non-seasonal side dish but I was craving eggplant, so here are the parmesan breaded eggplant rings, not too high in calories, which I served with a nice grilled beef steak!

The eggplant is a typically summer vegetable used for many dishes, even for desserts: a typical recipe from Campanian cuisine is chocolate eggplant, which I confess I have never made or even tasted!

The eggplant must be cooked because if eaten raw it contains a considerable amount of solanine, a toxic glycoalkaloid also found in potatoes and tomatoes.

PARMESAN BREADED EGGPLANT RINGS

Ingredients RECIPE PARMESAN BREADED EGGPLANT RINGS

  • 1 eggplant (about 400 grams)
  • 1 1/2 cup breadcrumbs
  • 1 cup parmesan cheese (grated)
  • 2 medium eggs
  • 1 1/2 clove garlic
  • to taste salt and pepper

FOR PREPARING THE RECIPE PARMESAN BREADED EGGPLANT RINGS

  • Wash and remove the ends of the eggplant, and cut it into rings about 3/8 inch (1 cm) thick.

    In a bowl, finely chop the garlic clove, add the breadcrumbs and grated parmesan cheese.

    Mix well for an even breading.

  • Dip each eggplant ring in the beaten egg, then in the breading, pressing a bit to compact the breading on the vegetable.

  • Line the bottom of a baking tray with parchment paper and brush it with extra virgin olive oil.

  • Place the eggplant rings on the baking tray lined with parchment paper, season with salt and pepper.

  • Bake at 392°F (200°C) for about 30 minutes, turning the rings after about 20 minutes for even cooking.

  • Ready to taste, maybe with a nice salad to cleanse the palate!
