
I went to my mother’s in Romagna and she gave me a lot of fresh eggs that I thought of using to make this fluffy frittata with bacon, mozzarella, and arugula, baked and delicious!!!
Andrea would have preferred the usual grilled steak but had to adapt ha ha ..Either you eat this soup or you jump out the window ^_^!!!!
I put the cheeses I had in the refrigerator but you can put Fontina, Galbani, Asiago almost all ….
The arugula an ancient plant goes well with many ingredients from pizza to fish and is considered a real “foshu“!

- 6 medium eggs
- 1/2 cup grana padano (grated)
- 4 1/2 oz gorgonzola (for me Igor)
- 6 1/2 oz mozzarella (for pizza)
- 1 1/2 oz bacon (diced)
- 1 3/4 oz arugula
- as needed extra virgin olive oil
- as needed salt and pepper

FOR THE PREPARATION OF THE RECIPE FLUFFY FRITTATA WITH BACON MOZZARELLA AND ARUGULA
Beat only the yolks with parmesan, salt, and pepper.
Whip the egg whites to stiff peaks and gently incorporate the two mixtures.
Line a 9-inch diameter pan with parchment paper, pour the mixture, and bake at 356°F for about 20 minutes until the frittata is tall and fluffy.
Meanwhile, sauté the bacon without any added seasoning and cut the two cheeses into pieces.
Remove the pan, place bacon, gorgonzola, and mozzarella on top, and put the pan back in the oven for 5 minutes, just enough time for the cheeses to melt.
Complete the dish with arugula and serve the dish hot.
