I follow many blogs on the web, especially foreign ones and in French, and here I found this chocolate and coffee marble cake that I made by halving the doses and using an Angel Cake mold of 18 cm.
The cake is delicious and soft with unsweetened cocoa powder, instant coffee, and sparkling water to aid the leavening, and it’s topped with powdered sugar and espresso coffee for the glaze and a few tablespoons of chocolate and hazelnut cream like Nutella!
The combination of coffee and chocolate is a winning and intriguing combo; fantastic in this cake, perfect for breakfast for a nice energy boost from the early morning hours…
The chocolate and coffee marble cake is a simple yet impressive dessert, perfect to serve for breakfast or afternoon snack.
The aroma is intense while the soft and marbled inside combines the strong aroma of coffee with the deliciousness of chocolate!
Preparing it is very easy: just a few ingredients to obtain a cake that is beautiful to look at but even better to eat!

Ingredients RECIPE CHOCOLATE AND COFFEE MARBLE CAKE
- 3 medium eggs
- 170 g sugar
- 160 g corn oil
- 2/3 cup sparkling water (to add to the batter)
- 2 1/2 cups all-purpose flour
- 1 2/3 tbsp instant coffee
- 1 tbsp unsweetened cocoa powder (abundant)
- 2 tsp baking powder
- 2 tbsp boiling water (to dissolve cocoa and coffee for the second dark batter of the marble cake)
- as needed powdered sugar
- as needed espresso coffee

FOR THE PREPARATION OF THE CHOCOLATE AND COFFEE MARBLE CAKE RECIPE
1) In a bowl, beat the whole eggs with an electric mixer for at least 5-6 minutes: the mixture should be light, fluffy, and well whipped!
Then add the sugar, continuing to beat the mixture well.
Now add the corn oil using the mixer at low speed.
Sift the flour with the instant baking powder, alternating the dry ingredients with the sparkling water and combining the ingredients with a flexible spatula.
Divide the marbled chocolate cake batter into two roughly equal parts.In a cup, mix the cocoa powder and instant coffee with boiling water, stirring and dissolving everything well.
Add this liquid to one of the two parts of the easy breakfast cake batter.Butter and flour the 18 cm Angel cake mold and remove the excess.
Then pour the two batters alternately and level the surface.
Now bake at 340°F for about 50 minutes, depending on the characteristics of your appliance.
As always, before turning off the oven, the toothpick test will be the rule, I recommend. I don’t always write it, but I believe it’s a rule memorized by all of us ^_^!To not lose even an ounce of fat, I also put a couple of tablespoons of hazelnut and chocolate spread in a piping bag, adding this as a decoration…

• For a more intense flavor, add strong unsweetened espresso to the batter instead of instant coffee!
• Sift the flour twice to make it more airy and light
• For a more spectacular dessert, pour the two batters in alternating spoonfuls and then create a marbled effect using a skewer
• Add a teaspoon of vanilla extract to the light batter for a more intense and enveloping aroma
