Ingredients COCONUT FLAVORED SHORTCRUST PASTRY RECIPE
- 1 3/4 cups all-purpose flour
- 1/2 cup coconut flour
- 1/2 cup butter
- 3 egg yolks (medium egg)
- 1/2 cup sugar
- 1 1/2 teaspoon baking powder
- 1 organic lemon (only zest)
- 1 pinch fine salt

FOR THE PREPARATION OF THE BASIC COCONUT SHORTCRUST PASTRY RECIPE
Sift the all-purpose flour together with the amount of instant baking powder.
Place in a bowl and add the coconut flour.
If you can’t find it, use finely grated desiccated coconut.
Then add the butter in pieces and the egg yolks.
Mix quickly until it forms coarse crumbs.
Now add the sugar, a pinch of salt, and the grated zest of the organic lemon or untreated lemon.
Now, knead everything quickly to prevent warming the dough with the heat from your hands.
Form a ball with the dough, wrap it in plastic wrap and let it rest in the refrigerator for at least 60 minutes.
When ready, take the coconut shortcrust pastry out of the fridge, and once it reaches room temperature, it’s ready to make pies and cookies!!!
