VEGETARIAN SPINACH LASAGNA

Vegetarian spinach lasagna, a cheesy and appetizing oven-baked main dish suitable for the whole family. It can be prepared in advance and baked at lunchtime, perhaps on a Sunday.

Spinach is very versatile in cooking, whether cooked or raw, boiled for an omelet, or as a filling for fresh pasta or a risotto. It’s also present in some savory pie recipes like the Emilian erbazzone and many others.

Spinach contains many vitamins, minerals, and chlorophyll and has many laxative and antioxidant properties.
Due to oxalic acid, iron and calcium are not easily absorbed, but we can solve this by adding some lemon juice to boiled spinach!

VEGETARIAN SPINACH LASAGNA

Ingredients for VEGETARIAN SPINACH LASAGNA RECIPE

  • 9 lasagna sheets (green or yellow as you like, I use green)
  • 1 package spinach (fresh)
  • 1 scamorza cheese (for me provola)
  • 250 g ricotta
  • 1 medium egg
  • to taste grana padano cheese (grated)
  • to taste tomato sauce
  • to taste basil

FOR THE PREPARATION OF THE VEGETARIAN SPINACH LASAGNA RECIPE

  • Preheat the oven to 350 °F.

    Wash the spinach and boil them with only the water left on the leaves for a few minutes.

    Drain and squeeze them well, then place them in a bowl.

    Blanch the lasagna sheets in boiling water with 1 tablespoon of oil and let them cool on a surface protected by parchment paper or a kitchen towel.

  • Also add the ricotta, the egg, and some chopped basil leaves, mixing well and seasoning with salt and pepper.

    Dice the scamorza and proceed to assemble the vegetarian spinach lasagna.

  • Place a few tablespoons of tomato sauce at the bottom of the baking dish and make a first layer of lasagna sheets.

    Add some ricotta and spinach filling, distributing also some pieces of smoked or plain scamorza according to your personal taste.

  • Add some grated cheese and a few drops of tomato sauce.

    Continue layering until all the ingredients for the spinach lasagna are used up.

  • Bake the dish and cook for 20/25 minutes or according to your oven’s characteristics.

    Once cooked, let them cool for a few minutes, then serve this tasty and simple dish.
