Ingredients for DELICIOUS TIRAMISU SEMIFREDDO
- 2 pasteurized egg yolks (available in supermarkets, approximately 1 oz)
- 2 pasteurized egg whites (available in supermarkets, approximately 2.5 oz)
- 5 tablespoons sugar
- 1 cup heavy whipping cream
- 8.8 oz mascarpone
- 5 ladyfingers (broken into pieces or use pavesini)
- 3 coffee cups espresso coffee (also diluted with a little water)
- as needed unsweetened cocoa powder
FOR THE PREPARATION OF THE DELICIOUS TIRAMISU SEMIFREDDO
Beat the yolks with the sugar using an electric mixer until the mixture “writes” and is pale and frothy.
Whisk to stiff peaks with the electric mixer the pasteurized egg whites and prepare the mold for resting in the freezer.
To the first mixture of whipped pasteurized yolks with sugar, add the mascarpone, incorporating everything with the electric mixer.
Prepare the espresso coffee and place the ladyfingers on a plate.
Whip the liquid heavy cream and add it to the yolks, sugar, and mascarpone mixture.
Also add the whipped egg whites, mixing carefully with a flexible spatula.
Line the loaf pan with plastic wrap and make a first layer with the mascarpone cream.
Break a couple of ladyfingers, dip them in the coffee without soaking them and place them randomly on the delicious cream (or make a defined layer, as you prefer!).
Continue layering until you run out of cream and ladyfingers; then cover with plastic wrap and leave in the freezer for at least 3 hours.
When serving, take out the tiramisu semifreddo by running the mold under hot running water for a few seconds.
Place the mascarpone spoon dessert on a serving plate and dust it with unsweetened cocoa powder sifted on top.
