The holidays are over and today I’m posting an easy, quick recipe and low-calorie like the light and healthy carrot salad with parsley and lemon that is tasty and very simple as seen on a French website.
Carrots are a vegetable rich in vitamins such as A, B, C, and E and their consumption helps to defend the body from infectious diseases.
Carrots have only 35 calories per 100 grams, they are diuretic and purifying, regulate intestinal functions, and beta-carotene stimulates melanin production.

- 14 oz carrots
- 2 lemons (juice only)
- to taste parsley (chopped)
- 4 pinches sesame seeds (for me white and black)

FOR THE PREPARATION OF THE LIGHT CARROT SALAD RECIPE WITH PARSLEY AND LEMON
Wash and peel the carrots.
Using a grater, slice them into julienne strips and place them in a bowl.
Squeeze the lemons and drizzle the fresh juice over the julienne carrots.
Finely chop the parsley and add it to the carrots, seasoning with salt and pepper.
Mix well, cover with plastic wrap and keep cool until ready to serve.
When ready to serve the detox carrot salad, take a food ring mold and arrange the lemon carrots inside, pressing them down a bit with a spoon.
Add a few pine nuts and a pinch each of sesame seeds.
Serve immediately this simple and tasty detox and low-calorie salad!
