FOR THE PREPARATION OF QUICK AND TASTY SANDWICHES
This time I bought the sandwich bread at the Famila supermarket in San Lazzaro di Savena, just a stone’s throw from Bologna, and found square-shaped bread instead of rectangular, very tender and, as always, without crust.
I doubled these large slices and then cut them into 4 wedges like a pinwheel!
For one filling I simply placed a slice of mortadella, a slice of emmental cheese, and another slice of Bologna.
We always cut the bread into soft crustless triangles and place a slice of salmon, washed and dried arugula leaves gently, and another slice of smoked salmon.
Put a dash of extra virgin olive oil in a small pan, and once it sizzles, add one or more eggs based on your guests and how you want to set up the mixed appetizer buffet.
Mix the yolk and whites just enough to keep the mixture soft and tender, so I recommend a quick cook.
Season with salt and pepper and turn off the heat.
Fill the sandwich bread wedges with these eggs, also adding some grana cheese flakes or raspadura.
Close the sandwich and the trio of sandwiches is ready!
