Ingredients for Walnut and Chocolate Cake

  • 9 oz walnuts (coarsely chopped)
  • 3/4 cup sugar
  • 1 2/3 cups flour
  • 4.5 oz dark chocolate chips
  • 4 eggs
  • 1 tbsp lemon juice
  • 1 packet baking powder
  • 1 oz dark chocolate (shavings)
  • 2 tbsps powdered sugar
  • to taste butter

Preparation of the Walnut and Chocolate Cake

  • First, coarsely chop the walnuts.

In a bowl, beat the egg yolks with the sugar until you obtain a frothy and light mixture.

Separately, whip the egg whites until stiff and fold them into the egg cream gently with an upward motion so that they do not deflate.

Add, alternating in small doses, the flour, chopped walnuts, and dark chocolate chips. Mix well and add the tablespoon of lemon juice.

Butter a 8-inch springform pan and lightly flour it, tapping out the excess flour.

Pour the mixture into the mold and level it on top with a wooden spatula. Place the cake in a preheated oven for 35-40 minutes at 392 °F.

After the baking time, which you can verify with the classic wooden toothpick test (if it comes out dry, the cake is ready), remove the cake from the oven and let it cool slightly.

  • Finally, dust it with powdered sugar and decorate it with chocolate shavings.

Suggestions

You can further enrich this cake by filling it with buttercream, coffee cream, or whipped cream after slicing it in two horizontally.

Instead of dark chocolate chips, you can use mixed candied fruits (citron, cherry, orange), diced for 7 oz. Decorate the top of the cake with whole walnut halves.

Preservation of the Chocolate and Walnut Cake

The chocolate and walnut cake keeps for 5-6 days under a glass dome and in a suitable container.

FAQ

  • Can I use other types of nuts instead of walnuts?

You can replace walnuts with hazelnuts, almonds, or even pistachios. Each type of nut will give a different nuance to the cake’s flavor, but the result will still be delicious. Walnuts, however, are ideal because they provide a soft and flavorful texture.

  • Can I add liquor to the batter?

If you want to give a more intense aroma, you can add a tablespoon of rum, brandy, or hazelnut liqueur to the batter. This step is optional but gives the cake a refined nuance.

  • What are the ideal pairings for this cake?

The walnut and chocolate cake pairs perfectly with crème anglaise, whipped cream, or even a scoop of vanilla ice cream. For a special breakfast, try enjoying it with a good coffee or aromatic black tea.
