- 4 sole (2 of 12 oz each, cleaned by the fishmonger)
- 3 oranges (juice and zest)
- 3 tablespoons sliced almonds

The best months to buy sole are… all year round!!!
If you want to try your hand at filleting this flat fish, you should first remove the skin, then cut along the central bone from head to tail, then insert the knife under one of the fillets, separating the flesh from the central bone and do the same for the other fillet.
However, if you have everything done in the store…. ^_^!
Place each fish fillet on a surface and lightly flour it, removing any excess.
In a large pan, pour some extra virgin olive oil and when it’s hot, carefully add the sole fillets.
After a few minutes, pour in the orange juice and a little grated zest.
Season with salt and pepper and gently turn the sole fillets.
Wait 2 minutes and turn off the heat.
Add the sliced almonds (which might have been better toasted in a pan for a few seconds…) and arrange your guests’ plates.
