The quick cod and cherry tomato salad can, or rather should, be made in advance to amplify the flavors.
I used pickled capers, but in my opinion, the more flavorful caper berries are even better, but as always … the final choice is yours!
Instead of cod, a great choice would be to use hake… maybe still frozen, why not??

Ingredients for QUICK COD AND CHERRY TOMATO SALAD
- 14 oz cod fillets (for me, Conad Cod Hearts)
- 2 tablespoons pickled capers
- 15 cherry tomatoes
- as needed basil
- as needed extra virgin olive oil
- as needed salt and pepper
FOR THE PREPARATION OF QUICK COD AND CHERRY TOMATO SALAD
Personally, I preferred to buy frozen fish which I boiled for the time recommended on the package itself.
Then let it cool in a bowl and prepare the dressing.
Wash and dry the cherry tomatoes.
Cut them into wedges and rinse the pickled capers.
Combine them in a bowl with the shredded cod hearts, but not too much, otherwise it would be an unsightly mess!
Mix the salad and dress everything with the extra virgin olive oil, salt, pepper, and a generous amount of fresh basil.
A rich, nutritious, super quick appetizer …
