I saw a picture on the web, and immediately my mind thought of a quick and tasty recipe idea to make as an appetizer, which is also perfect for cleaning out the fridge! The quick savory mini croissants are simply triangles of ready-made pizza dough that I filled with a little tomato puree and mini mozzarella cubes.
After placing them all side by side on the baking tray, I brushed the mini croissant tray with beaten egg and sprinkled here and there with mixed herbs (for me basil, parsley, and chives) which I also added before rolling up the dough.
Just pop them in the oven and wait a few minutes to see them puff up and turn golden and… yum yum!!!
As filling, I would also have put leftover mixed cold cuts, ricotta cheese seasoned with salt and pepper and pieces of salami, leftover mixed cheeses, grilled vegetables in pieces, leftover ragù… basically, open the refrigerator and let your imagination run wild!
P.S. The Canon is back home but today is truly a ME day… well, you get it, and the photo is by ME… too… I tried to fix the saturation and other little things but in the end, I gave up as we say here!!! Anyway, these small stuffed savory brioches are very tasty and versatile, and I recommend them!!! Recipe also to be made in a sweet version with ready-made puff pastry and Nutella, jam, cream, etc.

Ingredients for QUICK SAVORY MINI CROISSANTS
- 2 packages ready-made pizza dough
- 1 small egg
- to taste tomato puree
- to taste mozzarella
- to taste mixed herbs (parsley, basil, chives)
- to taste salt and pepper
PREPARATION FOR QUICK SAVORY MINI CROISSANTS
Place the ready-made pizza dough on a work surface.
With a fluted pastry wheel, cut 3 horizontal and 4 vertical lines on each.
In each of the 12 rectangles, draw a diagonal and place on the wider side a bit of tomato puree, a cube of mozzarella, and sprinkle the entire surface with herbs.
Season the entire seasoned pizza base with salt.
Roll each savory triangle and place them next to each other, covering the whole tray already lined with baking paper.
Beat a little egg in a cup and with a pastry brush, brush all the quick savory mini croissants.
Add more chopped herbs on the entire layer of savory brioches if you wish.
Let it rest for 15 minutes covered with plastic wrap.
Bake the tray of quick savory mini croissants at 375°F for about 20-25 minutes or according to the features of your appliance.
While I’m writing the recipe, I thought it would have been better to sprinkle everything with grated parmesan cheese, which would melt and form a delicious crust… Well, I’ll save that idea for next time!!
Once removed from the oven, let them cool slightly and serve!!
