Walnut CAKE with Coffee Glaze

Sometimes I enjoy browsing cooking sites and blogs on the web, especially in the French language, a language I adore and, although my school days are long gone, I always try to keep it alive in my mind, and this is certainly a very pleasant way to do it!!!

While surfing the web, I found a beautiful blog this and this delicious recipe for a walnut cake with coffee glaze, perfect for the cold season (which seems to be coming) and very fluffy, a true delight!

The walnut is a fruit that is very good for the heart, and it is recommended to have a snack with a few kernels; it is used for creamy dressings for pasta, added to salads and bowls of vegetables and legumes, and much more!

WALNUT CAKE WITH COFFEE GLAZE

Ingredients for WALNUT CAKE WITH COFFEE GLAZE

  • 5.3 oz walnut kernels (ground into flour)
  • 4 medium eggs
  • 1.2 cups all-purpose flour
  • 0.75 cup sugar
  • 1 tbsp instant coffee (dissolved in a little water)
  • 2 tsp baking powder
  • 0.66 cup butter (soft)
  • as needed powdered sugar (for the glaze)
  • as needed instant coffee (for the glaze)
  • as needed water (gradually and carefully for the glaze)

FOR THE PREPARATION OF THE WALNUT CAKE WITH COFFEE GLAZE

  • Separate the egg whites from the yolks and place them in 2 separate bowls.

    Beat the egg whites until soft peaks form and set them aside.

  • Beat the soft butter with the sugar to obtain a soft and light mixture.

  • Dilute the instant coffee with a little water, then add it with the egg yolks to the butter mixture.

    Continue beating with an electric mixer and add the chopped walnuts using a food processor.

  • Sift the all-purpose flour with the baking powder and add the dry ingredients to the mixture, alternating with the whipped egg whites using a flexible spatula.

    You will obtain a very creamy and fluid mixture that you will pour into the already buttered and floured baking pan.

  • All that remains is to bake the walnut cake with coffee glaze in the preheated oven at 356°F, letting it cook for about 40 minutes or depending on the characteristics of your appliance.

    While the cake cools, preferably on a cooling rack, prepare the glaze by putting 100/150 grams of powdered sugar in a small bowl, adding a bit of instant coffee and water.

    Mix vigorously and adjust the fluidity of the mixture and pour it over the top to cover the cake entirely.

    Before it solidifies, place 7/8 walnut halves and… enjoy it so much…
